According to Wikipedia, three animals of high intelligence are "apes, crows, and dolphins." Maybe only smart animals can be Touhou protagonists. We have humans as the usual heroines, and Aya in her own spin-offs. Will we get a dolphin character one day? Maybe that's why both the joke game with Mima as well as an actual flash game are underwater themed?

In any case, would you like a dolphin Touhou? What new types of species would you like to see in Touhou?

Although there's probably still a thousand eastern monsters to choose from, only one I know of that hasn't been Touhou'd yet is a tentacle monster. It's probably not very likely.

I'd like to see a Frankenstein Touhou, though I don't know if Japan has an eastern counterpart like they do with the Western vamps and witches [and werewolves, but momizi is kinda close to that one...]

Well, not exactly as Touhou characters, but I'd like to see a tearsucker moth (a domineering, sharp-tongued girl who shows her love by making you cry with bitter words and licking up your tears. A semitic deity, Anat, is already associated with tear drinking though), feather-legged assassin bug (futa doujin material, lures the more childish characters, especially Wriggle, with sweet food and rapes them with a three-segmented beak on her crotch), cross of a penis fencing flatworm with the sazae-oni myth, a siphonophoran (probably a human-sized girl with many doll-sized "sisters" hanging off of her frilly skirt? ) and heike crabs (someone in the OC threads even drew one. )
