Everything is broken and and covered in misery, but that doesn't stop the characters from being colorful and having tea parties.

Kanako? I think she'd be happy to get whatever faith she can. As for Shikieiki, isn't she by nature incapable of error? Impervious to bias?

It's not "grim". It's just dangerous. As >>5720348 said.

It doesn't go out of its way to be miserable, like WH40K seems to, it's just a result of the fact that it's populated with fantasy creatures and demons. By design, it's a scary place. But if you can get along, it can also be a paradise.

Still a paradise full of demons, though.

That doesn't mean she is cruel to them or something like that. Just because she has the habit of seeking perfection on the subject doesn't mean it's a "grimdark" side of touhou. It's not like she goes around punishing people, her danmaku battles work as something to tire people up and then make them listen to her so they can reflect on their choices.
