So I'm kind of learning Japanese.

I'm trying to get a base with the help of Pimsleur lessons, though I know it's a shallow one, while learning the kanas. Both are going pretty good so far, but I'd like to use a textbook too.

Any recommendations? I've looked at Genki but I don't know how I would use it for self-study as it seems to be geared towards class room work.

Looks like this. Teaches grammar.
Then use Tae Kim's Guide as well, that's online. You can get Anki decks prebuilt that have exercises that correspond to his grammar lessons. There's also this, this is a real in-depth grammar lesson

For kanji, which I recommend studying as soon as you can read kana, go to Kanjidamage.
Most textbooks are shit.
PS to learn kana faster if you have a DS you can use a drilling app called Project JDS

If you ever get stuck in a kanji, try using Microsoft IME pad, and just draw to the best of your ability of what it looks like. This will at least give you a starting point for the base kanji, then I'd look it up in a dictionary to make sure it isn't being used differently as in said example.

I tried doing it with one of those kanji dictionaries for Nintendo DS, but I haven't practiced stroke order enough to know it instinctively for new kanji, so it was pretty hopeless.

OP, just look for some simple flash games or something that help with memorization.

Anyway OP, do what's suggested so far. Tae Kim, youtube resources, etc etc. One I may suggest that is a very very good resource is YesJapan. If you are serious about study, I highly recommend it. Yes, its a subscription based site, but for the knowledge you gain, it is far worth it. Plus, they post videos about japanese topics. Highly recommend it.

One thing I've learned from studying Japanese is that bilingual dictionaries are horrible. My favorite example is this:
