Can anyone here who knows anything about Japanese explain to me why the particle 'ga' is used before imasu, but never before desu?

desu is used to connect subjects to predicates.
iru and aru are the verbs for existence.

English has these two concepts rolled up into the verb "to be."

Because `desu` is not a real verb, but
です /(aux) (pol) polite copula in Japanese/(P)/

while iru is real verb
居る [いる] /(v1,vi) (1) (uk) to be (of animate objects)/to exist/(2) to stay/(v1,aux-v) (3) (after the -te form

Another quick question if you guys are still there. What would be the verbal noun form of a verb like taberu? like how in english it would be 'eating' as in, "I like eating". Pretty much all those -ing forms.

Granted, "I like to eat" would be a more appropriate translation, but both mean the same thing. You're just going to confuse yourself at this rate, man. Just keep studying. Japanese AND English.
