Most doujinshis are sold and try to appeal to people, and even if they are just fanwanking,they are polished, properly looked over and a few of them are made from people with talent.
Fanfiction lacks polish, and talent does not grace it much.

A lot of english ero fanfiction is hardly fappable, usually just hilarious, normal fanfiction is usually average to bad to hilarious.

Doujinshi tend to have average to good art (and those with bad art are deleted and never looked at again by most people, unless it's for humurous purposes).

So I think, when it comes to ero, they fullfil their role quite well, however I've read a few interesting non-ero ones as well.

There's probably more yuri fanfiction than there are doujinshi. The shit:quality ratio between yuri doujinshi and fanfiction seems fairly similar, from what I've seen.
