Canonically, Yukari is the type of person that's lonely, but also creepy even by Youkai standards. She's incredibly intelligent, but is incapable of effectively teaching since she'll speak in highly abstract terms. Immensely beautiful, but so vain that you can't help but be annoyed.
It almost feels like a literary lesson in pride, if she just took a lesson out of Yuyoko's book and took it a little easy then she might be the happiest person in Gensokyo.
I feel like she would fall for anyone who could teach her that, but it also seems impossible to get her ear since your not 'on her level', it's also not so easy to hang up your own pride.
The very definition of a troubling woman.

I had an idea like that awhile ago.
The plot would be Yukari is experimenting with the idea of 'Youkai Marriage' to promote stability in Gensokyou by wedding Humans and Youkai, which is officiated by the human offering a body part to the Youkai to eat. This results in the Youkai's existence being less volatile and gives them a protective compulsion for their partner.
Yukari would be the first to try it out, using rigorous empirical analysis, she selects the perfect human and offers them something they can't refuse(maybe saving a relative from cancer or something like that) in exchange for his courtship sealed with his eyes. The meat of the story would be Yukari going through the motions of being a married couple in a very systematic way, leaving the blind husband rather confused and unfulfilled, and Yukari would try to convince herself that she's happy and her plan is working perfectly, but she isn't and it's not. The twist would be that her analysis WAS perfect, but it was a for a different guy and the husband was someone she grabbed by mistake.

I thought about those works actually and I think this concept, while cannibalistic in form, is very different in function. When a human get's eaten in Zounouse's work, they die, they typically don't agree to it or bring it about, and it serves the function of some cruel society that's seemingly impossible to change. I used to believe I disliked those works because I emphasized with the people getting eaten out of nowhere and how uncomfortable to see people let it happen, but now I think it's because I've only lived in 'interesting times', having had a position at five different companies in my career when a typical Japanese salary worker would only have one by this point, so I'm repulsed by people who live in complacency and are too afraid of change to question their motives and purpose deeply, because I've only lived in comparable chaos. The second issue I have is that Zounouse's works are about human sacrifice and death, but I believe death is too easy, short, and having known a few suicidal people, is just a sterile escape hatch for weakness. I prefer works about suffering and change, where death and giving up are options, but they're the easy, boring solution.

It'd be important that the guy giving up his eyes survives, does it willingly for some reason, and has to live with the consequences of his actions. Yukari would also have to be doing this because the world is changing in some fashion and society has to adapt to it, maybe dwindling population or Youkai disappearing because the human village is to comfy and at the same time the Youkai are too relaxed now to terrify them like they once were, whatever it is, it should be Yukari trying to hold onto the status quo in some fashion through an extreme means.

tl;dr Zounose writes about death, sacrifices to a cruel society, and what people do in those situations and I prefer stories about consequences, the shifting sands of The World, and pride.

It's also tone deaf and poorly delivered, almost to the point of coming off as comedic. RAIN FALL is a good example, it's a horrible disaster as shitloads of people—humans and youkai—die. With some dying despite the best efforts of the protagonist. It could be a decent theme of how you can't hope to save everyone, but it then sours the ending with everyone forgetting the incident to a drinking party. Canni-can depicts this human internment camp the Kappa have where they take these husks of people and lead them into a comically large blender like lemmings. Kaminare features a child from the village being made into a sacrifice and nobody, but Sanae, has a problem with it until she's forced to eat it, and afterwards thought it was delicious. It boils down to shock value and kills the impact or emotion of a scene when it's played off like a joke.
TL;DR he should stick to writing comedy.

Bear with my rambling for a bit. The way I interpret Yukari's character is that if anyone is against the status quo, it's her. After all, if she was complacent, she and most other Youkai would've died and Gensokyo would've never been founded. While she likes chaos, she isn't seeking it out for the sake of it and instead would try to change the status quo for the better of all. She of all people should understand that it's Humans who have the power over Youkai because their very existence depends on them, Youkai boiled down to their most basic are parasites and adaptability is not their strongsuit. Just look at the Tengu who are so deeply rooted in tradition that they're a facsimile of the powerhouse they once were. Everyone is complacent with stagnation and their petty squabbles; everyone but Yukari who is the ambitious outlier. She should be researching ways to stabilize Gensokyo's foundation so that it's not so precariously balanced on a knife's edge, and at the very end would be the holy grail of severing their dependence and allowing Youkai to be truly free and independent, a real middle finger to the Moon.

With this in mind to the dating of gappy: her every action is thought out and carries weight. Nothing is wasted. Everything has a purpose. No action goes without consequences. That said she's not infallible, can overthink, and can make mistakes, which can make for a great story of her either trying to fix her fuckups or triple down because of pride. Yukari doing this whole stability by dating thing is an option she can take to attempt to anchor the existences of Youkai and prolong Gensokyo's life and stability. It might not be the greatest patchjob and could leave a bunch of holes, but it's a step in the right direction, and obviously ensuring the safety of her own existence is a priority. And in the case of "I fucked up and gapped the wrong guy" she's stuck with a long term investment her pride won't let her back out of. He's not happy. She's not happy. Ran is giving her side looks like she's stupid. How does she make the most of this? How does she reconcile her nature as a Youkai when she's living with a human she just can't gap away?

The significance of the main character losing his eyes would be his willingness to overlook the irregularities with Yukari, she would be the last thing he sees and the image of her in his head would change as he slowly learns more as her husband. At first he'd be perturbed by the fact that she doesn't seem to understand his emotions at all and talks past him like he's said something entirely different(because she can't comprehend that she picked the wrong guy), then he'd start discovering some hints at the things she's done(maybe he sneaks out somehow and visits the village), until finally he happens upon some of the awful skeletons in her closet until he has no choice but to confront her directly.(Having him be blind also maintains the mystique of the Yakumo household, which I don't believe has ever been depicted)
The times when Yukari actually gets closer to her husband should be accidental and a result of the Husbands efforts to affirm his role. Like him picking a flower for her that he couldn't see was a Spider Lily, her becoming subtly distraught over this(flower language for 'I hope you die'), and the husband, learning of his mistake later and at a loss of what to say, tells her something like 'I'd be sad if you died', which is one of those lines Yukari might laugh off in theory, but actually hearing someone truthfully say they care about her would have an effect.
The relationship should essentially hinge on whether someone could forgive Yukari and understand she did what she did because she didn't want to disappear. That decision should NOT be a saintly one, but a bitter realization that the man effectively sold his life for a similar reason and only decide to forgive Yukari because she's an ugly representation of what pure, pragmatic pride gets you and he now sees himself as being in the rare position of someone who can affect that.
At the end of the story, the picture of Yukari in his head would go from her proud beautiful self, to a emaciated, tired, scared woman, clutching onto her playset.

tl;dr: Someone who loves Yukari should have to 'discover' her past misdeeds and understand her nature, loving her in spite of it all.

I think the reason is to give grounding for binding the two together, and blindness is an interesting problem to write a story around. The flaw is that the human really gains nothing other than a hot Youkai waif (which he cant even fucking see lmao), which isn't really something I think you need to give yourself a disability for. In those stories the human sacrifices a part of themselves to gain something like power in proportional exchange to the value of the offered part in a kind of contract. In this case it's only benefiting the Youkai which grounds her existence. Now he did mention an offer he couldn't refuse like saving a loved one which could push one in doing a deal with the (figurative) devil. It needs a plausible enough explanation for why, the explanation doesn't need to be airtight, just something slightly above handwaving it.

Now in my opinion, if we're really going into the "Youkai must take human husbands for Gensoyko to stabilize" bit, there's always the technically infinite blood and other 'certain' bodily fluids associated with vitality and spirit that they probably don't need to take a chunk out of their husband on the bridal bed. Feed him a lot of food in the day, drain the excess lifeforce/spirit at night.

The problem would be that more aggressive and dangerous Youkai are disappearing due to the more peaceful nature of Gensokyo, 'maximum incident load' being reached, and the population slowly increasing as more outside world players(Remilia, Mamizou) pop in. Yukari would see these projections and start experimenting with alternatives.
Due to the whole 'aggressive and dangerous' part, it's not like those headstrong Youkai would agree to something sappy like marriage unless it was baited somehow, which is why it's the Husband offering a body part. Anyone who see's the couple knows what happened as well just by looking(missing body parts), so the double benefit is that the Youkai remain notorious. The trap is that they'd have inadvertently 'accepting their Husband's love' into their bodies, so in the future their very nature could be changed into being more gentle or at the very least not outright attack humans while wed.
This wouldn't be necessarily 'the best' solution, it's more of a trial run for Yukari among a couple other alternatives, which could be explored in the story as well, maybe as a catalyst for the Husband learning what Yukari is capable of.
As for why it has to be the eyes, my thought is that the offering of the body part should be in proportion to the Youkai's standing. Sight is the most important sense to humans and the eyes are the most beautiful part of a person's body, so it seemed natural that Yukari would take those.
Narratively, the loss of limb means that the Husband has passed a threshold. It would be clear there's no going back and they'd have to learn to live with the monster who took they invited to take that from them. From the Youkai's perspective, It's interesting to think about how their views on their spouse would change over time. For example Oni might be disgusted by the weakness, but acknowledge the strength it takes to live a good life with a disability.

Like I said above, this would be more like a 'political marriage' for evil Youkai and not good-natured ones like Kogasa, who've decreased in power, but have found a balanced life.
I think it's also important to establish a baseline of what Yukari's willing to do in order to explore her options for stabilizing Genskoyo. She'll make the deal very clear to the Husband prior, explaining it almost like a Kidney donation, but omit many of the details about Gensokyo and Youkai, it would be fair in her eyes.
The blindness also means there's a hard limit on any depicted horror. I did have another idea where it's Rumia getting married and the scene would be her slowly chomping off the arm of her new Husband like meat off pork ribs, which might be too far. The horror of amputation shouldn't be the incident itself, it's seeing people without hands and being offput by something missing.

This I need to think more about. Saving a dying relative is an understandable, desperate motivation, but it's also very cliched. I think what the Husband get's as part of the deal should reflect back to Yukari's character in some way, since this would be a story about Gappy first and foremost.

Part of the loss of limb aspect is that I'm weary of solutions that are too easy, but I don't doubt they can be written well, and probably in-line with some shinto/taoist legend.
Being blind and how that affects Youkai sex is an interesting subject to tackle though. The only way the Husband could really be intimate with Yukari is by touch, since body language and speech is so dependent on sight and she'd probably meter that in line with whatever strict marriage development plan she has. It could be a source of great frustration for her if the Husband finds a therapy animal or the like, although she would probably also have a personal attendant set up for him as well to look-after/spy-on him.

Overall, maybe any story about Yukari is just destined to be autistic.

You were right about being overprotective for the Head Maid, but I think I'm under some sort of trial period after accidentally making the Mistress mad. Ms. Izayoi told me I needed to dress better in the presence of the Lady, so maybe it was my appearance that made her upset? I've gotten older, and after working hard on a career it's all I've known until I took this vacation and ended up here, so maybe I let my appearance slip after so long and didn't realize. She did tell me I needed to shave, then walked say talking about meeting some kind of quality if I was to be seen by others. I didn't know this place was so uptight about those things.

Her librarian friend came up to me later on and asked me what my stock was, then handed me a bunch of books I couldn't understand. Then she told me I had to read it all if I wanted to stay. She may be confusing me with a helper in the kitchen for Ms. Izayoi, because one of the books is titled something like spreading something and I think a calzone, but I can't read Italian. This is a bit awkward though, because when I told her I didn't know much about Italian or stock other than that my family sold salt a really long time ago, she started calling for "Remi" between coughing fits. I've seen the movie a time or two, but comparing me to that rat from the film is a bit.....

Maybe it's her way of joking, I'm not sure, but after I was able to call over that little assistant of hers and bid them farewell, I met the younger Lady in the hallways. She started laughing and pointing at me then said her big sister was really embarrassed and told me "good job" before she sprinted into the darkness....

I need a drink after today. Maybe I can get Robin to get me one? Even though I've only been here a short while, he's really helped me out. Didn't think a hobgoblin would be this nice to a stranger but he's a pretty good fellow despite his looks. We usually hang out after shifts and talk about the day, so maybe he can give me some pointers if my phone dies and I lose contact with all of you guys here. If they have humans do it, they would need training and equipment for COIN-level operation this would be. Giving them that would then cause more and more humans to no longer fear youkai, putting all youkai in peril.
If youkai do it, then you have large numbers of youkai butchering fellow youkai at the behest of humans, which itself would kneecap fear generation in addition to upsetting the youkai themselves. Ferals might be beasts, but they're still (considered) superior to Food in the eyes of the bulk of even civilized youkai

Human exterminators other than Reimu and Marisa do exist, Reimu is just the most well known. One would assume they would do small fry cases like possession, the occasional Tsukumogami, or Youkai animals that had attacked someone. It wouldn't necessarily remove fear of Youkai otherwise that would've worked in the time before Gensokyo's conception. The Gensokyo Chronicles was and still is to an extent a manual on how to fight Youkai, the hurdle is being courageous or stupid enough to stick your neck out and exterminate. It's also limited by rarity of adequate training and materials which would be passed down in the family. If making new weapons or tools, it needs to become notable enough to have some history to it, an "origin" as Akyuu put it.
