Nah, all mannaka fumos are "modern". The "old" era finished with yukari (fumo 16) and started with kaguya (fumo 17), as noticeable from the fact yukari was the highest numbered fumo to get a v1.5 version and kaguya was the first fumo to get a tin badge included instead of a paper tag (although the very first run of kaguya fumos still had a paper tag).
Any differences in softness between mannaka fumos (and between regular fumos too) are caused by the usual variability in how much stuffing they've got.

Thanks for this, I actually have been making my own custom and I've been at a loss as to what material to use for the hair. I've gotten away so far with not having to actually sew anything, but I'll certainly have to for the hair. I don't want to buy a machine yet, so would it be possible for me to buy a length of fabric, cut out the hair shapes I'll need with a pair of scissors, and then hand sew it together? I've tried buyee, zenmarket and fromjapan, here's my ratings:
FromJapan >= ZenMarket >> Buyee
FromJapan isn't as cheap as the others but their packages are extremely well protected. ZenMarket is the cheapest but you need to deposit money in advance before bidding (you can grab it back whenever). Buyee isn't as good as the others but still usable, though their packet combining is atrocious so never use for more than a single purchase. Buyee's search engine is the best because it's yja's official proxy, so I always search for stuff on it then buy using one of the other two.

You can find listings with different prices even from the same store, because that's a way for them to try and sell them at a slightly higher price. Determined to find fumo I walked down a couple of blocks and went into Amiami 2nd. They didn't know what the fuck I was talking about when I asked for 2hu fumo or nuigurumi, but one of the employees recognized touhou and pointed me to the upper floor, where I could find related merch.
Once there, an employee simply crossed his arms indicating that they were out of stock. I felt like ass, but remembered that this store is called AmiAmi 2nd, so I asked them for their "1st" store, and he gave me a card with a minimap pointing to it a mere 3 or 4 minutes away.

As I was looking around, I saw that it was lacking some of the models I liked the most, but just besides it was another protected section behind a glass, which were considerably more expensive. The ones to the left costed no more than 18,000 yen, with the ones inside the glass costing no less than 22,000 and up to 50,000.
Right at the bottom I saw that there was my waifu Satori. Felt elated, and asked to see her. They took her out, held her and looked at the price tag, and my heart dropped at the sight of 44,000. I said fuck it, and went to the counter. When I tried to pay, my card was declined, then we tried again, and it was declined a second time. Told them that I would be right back after going to an ATM for the cash. I took out 50k, but then something didn't feel right. I felt like I was being fleeced. I don't know why it was much more considerably expensive that others, with only regular Cirno and 1.5 Reimu being more expensive. Tried looking for any reference for Satori's price tag but couldn't find anything even slightly comparable to what they were selling her for. Went back to the store and stood in front of the fumos for around 20 minutes like an autist, simply deciding whether to get her or not. The only other one I was considering was Remi, because I like her a lot too, her fumo is cool, and it was right there besides Satori. I really couldn't decide which one to take. Flipped a coin but no answer satisfied me. When I convinced myself to get Satori, something made me choose Remi instead, and the other way around. Then I seriously studied them and went with my gut feeling. My decision was made simply on the basis of the vibes I got from them by looking into their eyes and picturing them featuring in photos I'd take of them. I know I would have loved them both, but I had to choose one and as I saw one of them being left in favor of the other I knew I had just committed to my decision. But I don't regret it at all. It was only hard because I wish I could have taken them both... and because I did feel like it was just too much.

I’ve been wondering why Fumos seem to be so much more popular than other plushies and I think it’s because of the more simplistic design of their faces.

It works better in 3D than trying to make plushies in more detailed art styles, which gives them a kinda creepy, uncanny valley, almost taxidermied look, while Fumos look more natural and look like they actually have life to them.

Anyway I think the Marisa fumo was the best quality.
Cirno fumo looks a bit goofy and has a slightly negative canthal tilt. Can't really find good pictures that resemble it best.
Reimu fumo looks the most scuffed because I think the front of her hair was cut weirdly. It's way longer on the right side of her face than her left so her right eye is half covered. Also the frilly white parts of her bow and dress are straight up not frilly and the zig zag on her bow is partially worn out.
They were like $20 each and honestly for bootlegs that's fine with me. I'll be in Japan soon so I might be able to get some quality fumos.
