If ZUN ever came up with a story for a Touhou anime we would get something along the lines of Silent Sinner in Blue. Eleven chapters have been released in the last eleven months and still nothing of significance happened in the plot. All we got was pseudo-religious banter about Reimu's power and Remilia in a cute top hat (which is a good thing). Other than that it's kinda boring.

Having professional releases of Touhou games or animu will eat up his time and he already makes enough money to drink enough beer.
Also having a official animu or a non-doujin game release will make touhou more "mainstream". JUN clearly doesn't want that. He's already pissed off with all those gaijin playing his games.

He wants to retain full rights to the characters and setting, in other words.
