Human factions don't do too well with doomstacks. The best you can do with the Order is to load up on peasant boys and use them as rape bait for the monsters while your archers and artillery do the work. The monsters will be afraid of their new husbands getting hurt and will rout. Neutral factions should just avoid fighting all together by trading away excess peasants to the Danuki merchant guild, Lizard mercenaries, or P'orc barbarians and securing a military alliance. Just focus on economy and your allies supplied and you should end up with a nice wall around you.
