I started with 6 Embodiment of the Scarlet Devil
it's a good place to learn the basics. They are all quite good.
The real fun is in the street-fighter style games though IMO since you can play against others here online.
Those are 7.5, 10.5 and 12.3
12.3 sort of functions as an expansion for 10.5, you can play it alone but you only get 5 characters and 2 storymodes that way.
