While I'm inclined to agree with you, all of the servants besides Kojiro and presumably Archer are some permutation of Caucasoid, at least Lancer and Saber are, which were the only two Shirou had met before Archer.
So I think it would stick out to him if one of the servants was asian. As for Kojiro... does Shirou ever meet Kojiro in FSN? Almost all of Kojiro's scenes are just him and Saber. I don't think the point of "Nasuverse" is to show what your favorite character is doing in a different setting. I think it's so they're free to tell new stories unfettered by past developments. So I don't expect much in the way of significant reuse at least between the main 2 worlds. The scarce number and limited focus on guests indicates that. I did exaggerate somewhat to get the point across but I couldn't really care less if you have a cameo or get a bit of trivia. That strengthens the distinction. But I think it's infinitely better to craft a character specifically for the story you're telling instead of trying to work within some preexisting framework of an existing character just so your audience can clap. So I guess, let them remain in the background of their opposing setting with the exception of a few characters is what I'm saying. I guess one such character will be Caren, maybe.
