The reason for that is you're basically interacting with people that repeat the same questions/prompts/replies to customers a millions times over. Just download some app that has you cycle through them in smaller increments over and over..
I used "Write It : Japanese" which is some dinky app I found in the android app store, I'm sure there are much better ones out there.
It had smaller "lessons" where you both read and write the kana in smaller groups before moving to the next one etc...

After a couple of days of grinding that I was good to go.

I'd recommend writing in kana on paper as much as you can after that just to bake in the motions and let your mind/body memorize them fully.

So I've been learning Japanese for the last 3 or 4 weeks, and I'm really enjoying it! This is my first foreign language (not counting my coworkers code ...) so I honestly had zero expectations about what the process would look like, but I'm surprised how naturally it's been coming to me so far.

Err, maybe it's better to say I've been surprised how fast I'm picking it up, because I've found that as an English native, a lot sentences I've encountered thus far are easier to interpret by reading them backwards lol. For example, my brain parses the following:

I wouldn't recommend reading sentences like that. It creates a bad habit where you'll rush to the end just to know what the verb is and not actually read the sentence in its intended order. It's fine for simple sentences like the one you mentioned, but it becomes an issue when you see multiple verbs in their continuative form, but you don't know what their inflections will be until the final verb.

I don't think you understand the function of は or が if you're asking this kind of question. You said "What anon-kun wants to say...," but no one can actually answer whether you should use が or は because you haven't specified what you're actually trying to say by that.
は marks the topic of a sentence, this can happen to be the same as the subject in many phrases. が, however, can mark the subject, object, or possessive case in a sentence. Because of the fact that it can mark a subject, it can link two clauses together to show contrast as a conjunction. For instance, in the song ダダダダ天使, the singer says, "大概の衝動に無気力な天使ですが、ドキドキあげるよ" (I'm not an angel who's easily swayed, but for you, I'll make your heart race) to show that this behavior is different from what she would normally do.
So, if you use が here, you're contrasting what anon wants to say with what has already been said, whereas if you used は, you would be implying that you're only speaking generally as to what anon wants to say.
