Need to diversify my diet from instant ramen. Give Japanese foods and recipes to add repertoire. 食べましょ！

Does anyone know recipes to use umeboshi in? They are good just with rice and in onigiri, but I want to see what they're capable of when used with other foods. I think they will go well with Italian style cooking.
