How is Pokemon for a beginner? I'm about three months into learning.

I also have not had much luck finding Japanese subs for the original series, I saw that it was on Japanese Amazon, but I don't have a subscription for it.

It's a kids cartoon so it's going to be comparatively easy, but it's still written for people who are fluent in Japanese. If you've only been studying for three months it's likely still way too hard but if you enjoy watching it anyway, it can't hurt.

You could try improving your vocabulary using ankidrone starter pack before you get into anime.
Pokemon is nice.
