This comparison doesn't mesh well with gacha games.
Unlike terrible food, a gacha is just an embellished money making mechanism.
But unlike a slot machine, while it provides no monetary gain to you, it, if nothing else, can look fancy and leave minor goods like voice overs, pictures or sprites which one can download for free anyway.
It can be easily handled without any addiction, easily turned on or off, or disregarded entirely.
It's not filth like you dramatize, just a glorified slot machine, those are usually harmless (barring atypical designs), so long as you don't let them harm you.

"VNs" like Ace Attorney, Danganronpa, ZTD, 999, Hotel Dusk etc. are in a different league from traditional VNs though. For one, they have mainstream appeal and moment-to-moment gameplay with a lot of twists and turns to keep the player engaged. Part of this is because all of those franchises started off as portable system games, which requires a completely different form of pacing than traditional game systems.

The only traditional VN with mainstream appeal I can think of is something like Steins;Gate. It shares the same kind of pacing as all of the other games I listed out, and it has save scumming gameplay mechanics that tie into its time travel narrative even though YU-NO did this first but I don't see any mainstream love for YU-NO nowadays

I finished Arcueid's remake route and I must say, I really enjoyed the new scenes featuring Sensei Arc, her fight with Vlov and the bullying of Arc for being a baka onna. I wish the route was longer by another 10 hours featuring completely new events, as much as I like the manga parts getting adopted into the VN.
Even though she got no new scenes Akiha still is the standout best girl.

If we are talking about it representing anything at all, I would pin it down more on it representing her own humanity or rather its loss. As long as the shadow exists and she fears it, that means she is still in the realm of a normal human, and can still go back and life such a life, but the instant it disappears and she no longer thinks about it, she has abandoned her humanity and fully embraced that which is "the enemy of humanity" and "an undeniable sin".
Of course, canonically, it is merely a being that has been around since she was a child, and is intent on preventing magicians-to-be from becoming fully fledged, even though it doesn't seem to want to take action if possible. But if I wanted to *push* I could say that ever since the day the cats died (and the slow and secret magi upbringing her grandfather gave her(even if only behavioral and mental)) had began to worn away at her humanity, and that's why she was able to see it, with the reason it was so far away being because she had *just* began to lose her humanity, and as she grew older and more magi-like, the closer it got.

Then there’s also a huge possibility that they’ll introduce a new enemy for him in Sacchin’s route. You also have to remember how Arc’s route ended. Shiki monologues that he’s not even sure he could live positively while pretending nothing happened. But he still let Arc go because he wanted to respect his wishes so in the end, he’s still sacrificing himself for other people’s wishes. He could be facing yet another enemy in Arc True (maybe CM like what KT foreshadows?) but he isn’t just doing it for her, but also his desire to live with her.

I think what triggers the flashback especially is the victim being an innocent girl. There's a bad end where DA Noel shows him an image from his past of a 16 year old girl being bitten that makes him freeze completely. This is probably something that happened at the hospital. There's even some speculation that it's the girl who first notices he's woken up in the prologue.
Other hospital hints include Shiki feeling like he only spent a month in hospital despite him staying for half a year, remembering how he saw a 'dream' of blood close to when he was meant to be discharged, and him wanting to get the fuck out when he looks around the hospital with Ciel.

My guess is where Shiki decides to throw humanity out of rage when Roa fatal blow on Arc. He and Roa are similar in that respect where Roa slowly loses himself and his humanity out of his desires to be with Arc. They’re also similar in a way their life turned upside down after meeting Arcueid, but unlike Roa who completely misunderstood his feelings until the very end (and met his ruin), Shiki was able to embrace his desires for her despite their differences and his denial at the beginning. Shiki obviously doesn’t have the drive to risk this much in Ciel’s route and he was still clinging to his humanity after Arc offered her to be her slave (in comparison to Arc’s route where he’s the one who proposes that idea). He understood who Roa is and sympathizes with him to an extent, but he doesn’t have the intention nor drive to make him his enemy.
Shiki and Roa are like two sides of the same coin. Their similarities have been foreshadowed since KT where he speaks with him in his dreams and meets Arc!CM.

It’s when Alice wakes Souji up and he seems to remember memories that he wasn’t able to before and thinks an unfamiliar woman is going to kill him. He then starts to choke himself as soon as he wakes up. I doubt it was that soon.
Aoko only took ten years worth of already forgotten memories (the ones more easily manipulated) so theflower field, and consequently the woman, are something from earlier in his childhood.

In any case, why they let him go? It's confusing, and it's in the same league as everything else about the organization, "it can only be explained one we know their true intentions, reasonings, and MO".
For now, while I doubt it, it seems they are not necessarily malicious, and once they saw this one boy couldn't do the dirty anymore, they just went, "well, c'est la vie" and throwed him away. I do believe there was no fear of being discovered. It doesn't seem like the monuntain people have any sort of housing or organization, so even if people did go to investigate (which is even more unlikely, because it banks of the completely unaware person they just let go realizing how evil the operation was and telling it to the authorities), it would be hard to collect all of them, or even truly find their structure.
But then again, maybe they are just secretly using him as a sleeper agent. We won't know until 2 and 3 come out.

Looking at this line, I'm reminded of just how familiar these characters are with each other.
Kojika says it felt like she had known Aoko for way longer than she did in Sweets Hearts, Aoko says she felt like Soujuurou was like an old friend in this scene, Soujuurou always just went for Alice's first name, even though he wasn't supposed to know anything about the modern world, much less naming conventions in the west (and to a lesser degree, after just a short while of working with Aoko, Tobimaru felt comfortable enough to throw a full on punch at her face).
It makes me wonder if some time fuckery is involved.

Zel has a voiced line at the HF prologue in Realta Nua, so you CAN know what his voice is like, and yes, it is simmilar. (don't know if it's the same VA though.)

While I mostly agree with you, I feel the need to point out that, despite the fact I hate it, FGO has shown that god manipulated Solomon's actions to create a situation where Chaldea would be able to defeat Goetia in the future, so I would say that whomever touched that place first still has some interest despite anything else.
In any case, obtaining all the knowledge in existence and being able to overwrite reality to be whatever you like will probably end up being really lonely.
