What's everything I need to learn before I can start learning by consuming Japanese media?
1) Hiragana
2) Katakana
3) Sentence Structure + Kanji

And what else? I'm planning on picking up French again at around that point since I'll be more accustomed to learning a language and I already speak Spanish, which should make it easy to become fluent in.

This fucking author... I can't even look for it propperly in jisho and kanjimap, because for the life of me I can't figure out what the bottom (of the first one) and the center (of the second one) are meant to be, even if I find similar kanji.

Start learning basic vocab first. You can remember 100 kanjis in couple days. Then watch anime with jp subs on animebook using yomichan. Don’t try to understand everything. Already did (or doing) most of those. The hardest part is telling apart words, particles and okurigana. Lack of spaces complicates things a lot. Also decent chunk of suffixes seems to be just stylistic choice to express characters' without serving any grammatical function.
I tried watching jap-subbed anime a bit but I feel like should be saved for high intermediate level when my reading is more fluent. If I'm going to pause every frame it's just manga with extra steps.

I don't know about other people, but personally I find writing it out repeatedly helps. That's basically how kids in Japan and China learn their kanji/hanzi. I don't see why the same method wouldn't work for adults.

read whatever you can, even if its just a little, even if its just 1 tadoku or hukumusume 5 minute thing, youll notice a difference in how hard it is to retain things you learned through reading/listening, and through cards.
you do not have to do a starter deck, just read/listen/mine, none of the things you are fighting atm are even real, when you see the words in real sentences, its completely different
