If you experiment with some different combinations of wine/vinegar/honey, you eventually find a few that go really well together.

A lot better than it sounds, really. If the vinegar or honey aren't any good, it ends up tasting as bad as it sounds though. It's a good way to make even cheap wine taste good. Historically, this 'posca' was spoiled wine (read: vinegar) that was diluted in water until it was pretty thin, easily between 10:1 to 20:1. Honey and spices were optional. This drink was common for lower-class Roman citizens, slaves, and legionnaires.
