Cute girls with characterizations, in-jokes, and stories supported more by the fans than actual canon.
As far as danmaku go, touhou is much more easily accessible than most with multiple difficulty settings and tools to aid in practicing.
ZUN can write some pretty good stage music.
most people don't necessarily enjoy all of this, but there are a lot of people who stick with it for some of it.
