Old Fate doujinshi had rather poor art across the board. I have nothing but respect for the artists but the output speaks for itself really. I think I should elaborate a bit on the Tabata and Sudou thing and say that Ufotable art universally has this issue where in certain shots the eyes of characters are drawn too far apart and they end up looking derpy. See for example how Shirou looks in that shot of UBW episode 2 when he tells Rin he likes people like her. Sudou's Rin looks a whole lot more uglier than Tabata's when the artist screws up and draws a bit too big of a distance between the eyes. See the image for instance - I really like it and I have coomed to it many times... but that face looks off.

Exactly what it sounds like. Route ideas that didn’t make the cut.
In the beginning, the plan was for Fate/stay night to have four different routes, one for each heroine.
It would start off by letting the player arbitrarily choose between playing as either Shirou or Rin. Then around the middle of the story they would finally meet, and after that you would branch off into one of the four routes for the last half of the game. Yeah, I don’t really understand how it was going to work either.
Anyway, getting back to the rejected routes, it goes without saying that the Illya route tops the list.
Besides that, there was also the “Rider route where you fight against Rin and Saber,” and the “Caster route where Caster gets turned into a loli and becomes your partner.”
While all traces of the Caster route were completely erased, the development where you teamed up with Rider was actually folded into part of the final story.
If the Illya route had made it into the game, the diversion point probably would have been on the ninth day of the Sakura route. Instead of choosing between being a superhero and choosing Sakura, there would be a third choice where you could choose Illya.
But unfortunately, as it stands that choice doesn’t exist.

Right now, Mahoyo is my favorite. It's very unique VN and has a pretty cool atmosphere to it. The main trio have unbelievably good chemistry and the rest of the cast is also great. The visuals are gorgeous and the OST is top-tier. Plus, Nasu's best prose is in this game. Despite saying all that, Tsuki R has the potential to pass Mahoyo if they deliver on the next parts. Hypothetical Mahoyo sequels are too hard to speculate about since we have no idea what it's about, but a complete Tsukihime R could be a kamige among kamige when it's all said and done. We'll just have to wait and see.

I don't think you can really explore Rin and Kirei's relationship in any of the given routes. FSN has plenty of its flaws, but it's still extremely thematically coherent and well-put together. Changing too much stuff can really do damage to a well-oiled machine and shifting some stuff around for the purpose of making minor improvements can really have an adverse impact on the rest of the work.

Fate is hyperfocused on Saber and Shirou's relationship with her. If anything, the focus on the minor characters and the SoL aspect of the early portions of the route are precisely to its detriment because the rest of the route is concerned solely with Shirou helping Saber overcome her issues. UBW is the route most concerned with Shirou at the expense of other characters and the broader lore, with Rin and Archer being the only other two truly relevant characters. It reverses the roles of Fate by having the romantic interest be the one concerned with helping Shirou overcome his issues, with Archer there to help along as well. Kirei doesn't really have a role to play in either. From a storytelling perspective, it is best to have your de facto main antagonist's character, motivations and thematic depth be explored in the final route. If Kirei got explored more in Fate and UBW, his relationship with Shirou wouldn't be as compelling, especially since there is all this anticipation that comes with playing through the first two routes where Kirei is basically a mystery and it makes it all the more satisfying when we slowly unravel the intricacies of his character over the course of the final route. It helps that Shirou's character has already been explored throughout Fate and UBW, so the audience comprehends perfectly (hopefully) coming into HF how he ticks so all that needs to be done is to contrast him with Kirei. It helps that Kirei best contrasts HF Shirou as the one who continues walking the path he always walked and the only who has broken off that path. Kirei doesn't work as well as a foil for Fate and UBW and the themes they cover. In Fate he's basically just there to provide us with the basement scene and a final boss the couple of the route to beat and in UBW Archer and Gilgamesh together make the best foils for Shirou, one being the future he must not become and the other the original he must surpass in order to prove that the fake can indeed be better than the original - Shirou can indeed make Kiritsugu's ideal his own.

How Rin is explored throughout the VN parallels how Shirou is explored throughout the VN - Fate serves to lay the characters' foundations. UBW explores them in-depth. HF tests their resolve with a practical application of their beliefs. Taking how her and Kirei are explored, there is little space in the routes to make room for developing a more intricate relationship between the two. Shirou contrasts extremely well with both Rin AND Kirei - for different reasons no doubt but nonetheless he does. Kirei and Rin don't really have a lot paralleling and contrasting them and although it is not impossible to find something and flesh it out beyond "Kirei killed Tokiomi, Rin's pissed lmao", it, as previously stated, would harm the meta-arcs of both Rin and Kirei and they would stick out as a sore thumb in Shirou's meta-arc.

Frankly, it would be best to leave a Rin-Kirei in-depth conflict for the Illya route... or a Mind of Steel scenario.

Well by relevant I mean relevant to the overall themes of the route and therefore get their characters explored in-depth during it, not relevant as in they help drive the plot of the route. Rin is fairly prominent throughout Fate, but she's barely a character save for some superficial characteristics because the story is aiming to explore Saber and how Shirou reacts to her desire to annul the past. Caster is ironically more relevant to HF since her backstory introduces to the concept of the "anti-hero" that is so relevant to that route with its exploration of what becomes of those that follow Kiritsugu's ideals to the their logical conclusion.

Emulating I presume? I assume you are using Yuzu since that's a known issue. There's some options you can tweak in general you can't. It's basically a side effect of it being multithreaded. How good/bad the crackling is depends a lot on your hardware. I technically had a bit of audio popping but it was super seldom and not very noticable. Ryujinx might be much better at this but you could try that too (I didn't bother to try it).

I've not played the ps4 version so I couldn't say for sure, but some assets were so noticeably poor quality that I assumed it's a problem unique to the switch version.
For example, I distinctly remember the ceiling of Ciel's room at night looking all artifact-y.
