Because Shirou doesn't give up or afraid of anything. I thought he just came to a revelation after seeing Shirou, who has broken most of his bones and is probably covered in blood, continue to push forward and strike and even block attacks.

The realization itself was something along the lines of "no shit saving everybody doesn't work and makes me miserable in the end, but it's still a noble idea and pursuing it is worth it", but that didn't come from anything Shirou said IIRC, Archer sort of remebered it from looking at his younger self go.

Actually I think Kotomine would have had a grudging respect for it, since his own world was entirely made of upholding self-destructive principles just because they made him feel slightly less shitty. Sure, those principles are diametrically opposed to his, but he would understand how it works.
