Of course it's harder cause it's better quality, but they were new at the OG time and still managed to created a whole new product yearly. Now they've got a hang of it for sure, and also, since they've got the first part of Remake, they've got the base engine or whatnot, so that itself shouldn't be the bottleneck. And unlike the first time they did it, they have most of the script, which often seems to be the actual bottleneck with Nasu being very slow.

I think the next characters are DA Noel, Aoko, P. Ciel, and Sion in that order.

The first 3 are obviously the only characters they can add story wise, and I think the last will be a guest character. If it's not Sion, it's a random character like Nanaya, Neco Arc, Mario, Ryougi, etc.

Mio could also get similar treatment. We pretty much know she's the Panther so not sure they'd really hold back on her. Nah, the church guys haven’t done anything so they don’t even have a move list. It’ll probably be Aoko, Mecha Hisui, P Ciel, and DA Noel. They’ve already added the maids by themselves and as a pair so they’re fine with adding similar characters like Mecha Hisui and she doesn’t effect the story. Aoko is an easy add as she won’t effect the story and is a fan favorite. P Ciel and DA Noel are easy to add.

A bit of retroactive dislike in the case of Fate, but there are things to like about both despite it. Fate was more focused on Shirou's idealism while Tsukihime was more around mystery with copious amounts of edginess. One thing a lot of people might not consider is how Fate quickly got rid of its original cast. There was F/SN, F/HA, Carnival Phantasm if you're stretching it and then everything past that was a spin on the Servant war with completely different characters. Servants took over Fate, so if you enjoyed the story for Shirou then you'll likely have nothing waiting for you in the rest of Fate.
Comparatively, Tsukihime held on to its main cast. Arcueid and Shiki never go away as the story kept going forward, even as Melty Blood rolled around. Everyone was still there along with some new faces. Along with this, the cast lended its self better to a less serious tone very nicely, so once the original story was resolved Tsukihime became notably lighthearted and comedic with a few exceptions.
So if you read these stories and were more interested in the concepts, you'd probably prefer Fate for its constant spins on the Servant formula. But if you were more interested in the characters, you'd prefer Tsukihime's vast adventures with its cast members.
