Do you base your opinions/how much you love a Touhou on what they get in canon, or is it fanworks that expands upon them and gets you to love them?

I always find canon-purists a bit odd, considering just how fan-driven Touhou is, and how some characters get the raw end in terms of canon characterization. I could see disliking shit like "sanae is a slut" but like, look at characters like Flandre, where canon is barebones aside from choking meiling. And honestly, I still struggle to get canon Koishi.

I have my own headcanons for the characters that make me love them. They still stick to their canon personalities, but I flesh them out a lot more and explore their history, relationships, etc. I feel like a fake fan of sorts though because it’s my headcanons and not ZUN’s canon, so it’s not the ‘real’ character

Depends on the character, I love some canon where they're given a complex character because the alternative is some flandernized one that misses all the little details. But other characters are only seen once and never again, so fan content is all you get and it can vary wildly.
Of course there's the big brain option of headcanons, everyone interpets something differently.

The only other canon we got from Flandre as of late was that she's spoiled and only stays in the basement because Sakuya takes care of her, not against her own will. If anything that probably changes all of the fan interpetations.

Fanworks are only for memes, canon is the only source of interesting characters.

You're free to like the fanon version, though for me ZUN's writing is the second top reason why I got into touhou, you can find default moe-tropes everywhere, but authentic and believable characters are a rarity.

The idea that "only canon matters" is a modern predilection created by the copyright cartel's hegemony over contemporary art properties and ability to dictate what the "correct" canon is through the power of the court. The only fanon version I really like off the top of my head is Shou, a lot of people interpret her as a warrior-type even though she's basically the Buddhist equivalent to a race car promo girl.
I just think fighters with spears are neat.
