I haven't read that many Touhou doujins, but I've just read a doujin story about Meiling (non hentai).
In it surprisingly she is not the abused weak sucker idiot as often depicted, but totally cool, smart, witty and awesome and with hidden power level and does her job properly fending off intruders to the mansion without even breaking a sweat. (I won't be surprised if she could even beat Sakuya if she actually gets serious about it.)

Asatsuki DOu has made another "serious" Meiling story called the Scarlet Devil, though I guess I just spoiled it by telling you it's a Meiling story.

Asatsuki Dou is my favorite in general.

There's one grim and dark story where she was the dragon of the lake before Remilia moved in so Remilia had to go put her down. After an epic fight they eventually got her to be the gate keaper. I can't remember the name of the doujin though.

I like how it turned out that Meiling was the one originally called by everyone "The Scarler Devil" of that area (because of the red hair and how powerful she was), until Remilia beat her and took that name over.

There is a sequal. The first day Meiling starts working in the Mansion, she discovered Flandre for the first time. And Flandre use her "Taboo Lävatein" spell card on Meiling.
