some of the holos have known identities, as do you, and if someone really wanted to stalk them and follow them there's nothing stopping them from doing so
I think it's terrible that the internet allows the gathering of ill-intentioned individuals, some of whom may go on to do incredibly messed up things after being steeped in a culture that focuses on the self to the point that other people are treated as objects to be used

contrary to what you may think people can and definitely do steal in japan and so because the studios that the holos go into probably have equipment worth money, it's most likely that security inside the buildings are good. Think card entries, secure doors, cameras etc
and you are right in users being the typical leak for personal information. Then again, the holos aren't high profile individuals working in government facilities and deal with very important and sensitive information, so you're kind of going overkill with thinking about these things
holos are just everyday workers, and while they do have a lot of fans and viewers, they live life fairly normally like the rest of us. They're not super rich celebrities like the superstars you're used to looking at on tv, and a lot of them have lived life on their own at one point so they know about basic security, like how botan talked about installing a front-door intercam that she replaced when she moved into her place

I wish that aloe didn't have to leave too, but it was her decision to leave or stay, and I think it was a prudent choice considering the start was already messed up with antis and controversy, and she wasn't ready to face that so I can understand her choice
