Could Shirou/Archer trace a Saber?

He does.

In the fight against Gilgamesh in UBW, he matches Gil's weapons with their own.

In their first meeting in Fate, he only knew how to project Caliburn, to which Gil RESPONDED with Gram/Merodach. Had Shirou known he was capable of reproducing any weapon at that time, he could've done Gram/Merodach as well.

Except he can't, because it's not a weapon or armor.

The only thing Shirou can trace are weapons and armor.

And no, he doesn't have the Knight of Honor ability, so he doesn't get the EXTREME levels of "how do you define weapon" like Lancelot.

Oh, Tracing. Yeah, he can Trace it. Whether he can Project it is a different thing entirely.

Regarding armaments, Tracing is an automatic projection for Shirou (rather than Projection, actually, Tracing a sword is archiving it in UBW, and his "Projection" is merely pulling it out of UBW).

Shirou dying is irrelevant.
Archer killing a Shirou that would likely become Archer though carries the slight chance that the world will say 'Fuck this shit' and erase Archer's records (though unlikely and unverified).
Basically, UBW is one Archer's chance to tell himself 'What the fuck were you thinking' with possibly no lasting results.
