In the fight against Gilgamesh in UBW, he matches Gil's weapons with their own.

In their first meeting in Fate, he only knew how to project Caliburn, to which Gil RESPONDED with Gram/Merodach. Had Shirou known he was capable of reproducing any weapon at that time, he could've done Gram/Merodach as well.

Regarding armaments, Tracing is an automatic projection for Shirou (rather than Projection, actually, Tracing a sword is archiving it in UBW, and his "Projection" is merely pulling it out of UBW).
