Keyboard works fine. PCB or Mountain of Faith on normal is a good start. Make sure to use your bombs and it's okay to continue to practice for a 1cc.

If you have little or no experience with a keyboard.
If you have good reaction times, you should catch on pretty quick.
The only real advice is hold shift for focused movement, don't be afraid to use your bombs, and practice makes perfect.

If you want, you can use a controller, but you may need some external software to make the older games recognize your inputs.
Most people play with keyboard. There is a somewhat infected debate about which input method is best (I would say keyboard has a slight edge, since you can keep a finger on each individual directional input), but there are players at very high skill levels using either input method, so it essentially boils down to preferences.
Any Touhou game, even the easier ones, will be too hard for you as a beginner. You need to practice.
I think Embodiment of Scarlet Devil (Touhou 6) is a good place to start, since the attack patterns are simpler compared to later games, so that you can focus more on dodging. Regardless, a good first goal is to just clear your game of choice with all the continues available to you. Even if you use continues, beating a stage will unlock it in practice mode. Once you have all stages in practice mode, you just need to practice. Even with practice, don't expect that you will be able to clear every attack. To one credit clear (1cc) the game, it's enough to learn to clear the easier attacks, and then bomb the more difficult attacks.

Getting into the games is a long term project, but as long as you have the dedication to practice a little bit every day, you'll make it. I believe in you, OP.
