Why are anime characters always shown to shake hands with their left hand? Don't they know you only shake with your right hand?

The Japanese are backwards people. They drive on the wrong side of the road and keep to the left when going up and down stairs. Its only natural that they'd do that.

i'm not 100% sure but its supposed to mean you are letting your guard down for a friend or close person as the left hand is used in carrying a shield. it means you completely trust that person.

Cool TL Note from Tales of Abyss bro

The left hand is used for wiping the ass and it is haram.

I think this is the original meaning of a handshake: "Look, i have no weapon, I mean you no harm."

Actually yes, this is where handshakes come from.

I'm guessing it has something to do with where the Japanese traditionally wore weapons.
