Early on things got to her a lot, now she's somewhat more resilient externally but she cracks a bit sometimes and you see that she's only able to act so strong and confident because things aren't going to shit. We know she's got numberfagging burned into her brain. I don't know if she was always that way or her roommate's history did it, and I don't care to speculate. The point is she's always aware of her numbers.
We also know she's got a big perfectionist streak. Whenever things go bad or not as planned she will dwell on it and often will keep dwelling on it until it can be solved, especially if it's a recurrent issue. She may make excuses at times, but so far no excuse has actually managed to last.
While she claims to be lazy as fuck, it's pretty clear than when it comes to things she's passionate about she'll give her all and probably a bit more than what is healthy.

From this, my belief is that she sees her peers' numbers and takes it as the potential of what HoloEN can and should achieve, and her (comparative) underperformance is a result of her personal failings as an entertainer. Like the other anon said, anxiety. She's anxious because she believes she's not doing as best as she should be and she's desperately trying to figure out what she's doing wrong. It's clear now that there's nothing actually wrong, it's just a matter of people's tastes, luck, having a weak start and so on, but she can't help but believe she's still at fault somehow.

Also I get the feeling she's either baffled or refuses to accept her preferred games are not popular with viewers because why wouldn't you like them they're such great games.

Probably the last Marshmallow reading stream when she fucked around with her new mixer for the first time, but it's honestly really hard to choose.
The thing about her is that her best content doesn't usually come from gameplay, but rather from her zatsudan powers (with an obvious exception of Mario tilting her off the face of the Earth) and she has so many dumb, loveable moments that makes it really hard to single out just one.
