Also, the point is that following this ideal almost always leads to the fact that it's IMPOSSIBLE.
There is a time where you must choose whether you try to protect the whole, by sacrificing parts, or you try to protect what's close to you.
In the other two routes, he is not FORCED to make the choice so soon himself. Following through it, means making sure the people are not in danger(plus, risking someone close to you becoming a devouring shadow is not easy to accept).

I agree with you. However, probably sounding like an emo faggot, I felt that the True end was too happy. I still like how it resolves (Rin's comment about them being able to accomplish anything was nice) but I felt it defeated the point of Shirou's self-judgment by using Archer's arm.
