I'm not quite sure i got this, but, for a verb like 見(to see), is that symbol alone pronounced miru, and to make it negative as in "not seeing" would you pronounce it as "minai"?

Actually minai is negative. Mienai is an adjective meaning 'invisible'.

it's a small difference but you shouldn't get mixed up with simple meanings

The verb for 'to see' is '見る'
In the case of this kanji, '見' does have a sound of 'miru' However, you will mostly notice '見' to simply be the 'mi' sound of various sight based verbs.

However, the kanji DOES have another sound of 'ken' ... An example is '見学する' or 'kengakusuru - to observe'

Most kanji have multiple sounds depending how they are used, but have an overall meaning.

見れる = to be able to see (for instance, using telescope you can see the stars)

Did you not read about the goddamn okurigana? Just hold your goddamn mouse over the kanji and it will give you the reading in kana. Conjugate the okurigana and it should be clear as fuck as to what it should read.
