I do take Touhou seriously, just not canon touhou. It's more like a series of thought experiments on how their world would really work if all that happens in it would happen for real.

There's a lot of GRIMDARK stuff in canon touhou that gets glossed over and treated as a joke, like eating humans. It only looks like serious business if you start thinking of it as serious business, but that's not an approach Zun has ever taken himself.

I don't think Utsuho trying to use her powers to destroy the world in a fit of megalomania is an attempt to make the series more "mature" so much as it was an attempt to switch things up regarding the typically benign motivations of the antagonists of the series, much like how she also provides a change of the typical pattern for bosses by having the final boss be a subordinate of an earlier boss.
