...and I noticed that alongside Kotoeri (Apple's equivalent of Japanese IME) is a palette of hiragana and katakana.
So what, you say?
There are two kana on each side I don't recognize:
ゐ ヰ and ゑ ヱ
Judging by their positions, they're most likely pronounced "wi" and "we".
Has anybody else ever seen these before?

They're archaic kana that are no longer used.

ゐ is the hiragana for "wi"
ゑ is hiragana for we

ヰ - katakana wi
ヱ - katakana we

These have been replaced with
うぃ
うぇ

and

ウィ
ウェ
