It's been a lovely theory, but it's been denounced many times now. If Eirin were future Sakuya, she'd remember being a maid for Remilia, which means she was on Earth for the events that happened on the Moon. No matter how old she is, if she remembers the watch, it's impossible for her not to remember her former self (Remi's Fatehax wouldn't have changed anything, otherwise Saku-rin wouldn't exist). Lastly, is she is future Sakuya, then that means when they met in IN, there is no Eirin. It'd only work if Sakuya were future Eirin.

Although amnesia and Remi's Fatehax would fit into Sakuya not remember being a nurse and Kaguya's rescuer, it's still an impossibility seeing as Eirin's lived for about as long as Kaguya has, and Sakuya's been called a human on multiple occasions.
