Reimu and Yukari for easy mode.
But for fun, I prefer Remilia and Sakuya. Sakuya is shit for bosses, but her shot is good enough for stages. Remilia's focused shot kicks ass when you just drop the magic circles in the boss' face. And then you can concentrate in evade as if you were playing Reimu/Yukari.
Oh, also they both have good bombs, so I know that as soon as I counterbomb I'll probably take out the boss (which is great because there is no point in continue fighting her when you already lost the bonus).

Malice Cannon just absolutely fucks familiar heavy bosses. Keine and Eiren in particular fall like grass before the lawnmower.

I've always played with the Ghost team, and... it's the only time I've cleared a Touhou game on Hard.

Mostly Border Team. I know it's the most boring option, but I just can't be arsed to do that "aiming" thing in a bullet hell shmup. Netherworld Team was the one I learned to play on, by abusing Yuyuko's absurd spread that covers the entire screen, but I rarely use it anymore because I fucking HATE Youmu's shot (and any self-directable shots in games) and Yuyuko is painfully slow. Scarlet Team wouldn't be bad except I loather those characters storywise, and MariAli is just too damn weak and forces you to do that aiming bullshit.
