They're not particularly safe and you have to either blow meter to hit-confirm them into a real combo or open with 623B, which gives the other person a massive frame advantage if you don't cancel it/extend it. You had the right idea, starting to shield and bunker...but to be completely honest you've got a lot more to gain by just thinking of other ways to escape (blocking, jumping out, heating).

More often than not I was just baiting your shields.

Those give basic combos, aka bread-n-butter(bnb) for the characters. From there, just keep playing online and soon you'll recognize the moves each character does and it'll become easier to block. And yes, you need to block, block, block. Block on wake-up especially, instead of spamming attacks.

Start by NOT PRESSING SO MANY BUTTONS FOR THE LOVE OF BEATRICE.
Then you can start focusing on using a single character, learning his combos and basics, and eventually you can move to the more advanced stuff. Eventually you'll get a better sense for how to play and learning many characters will be easier. Don't expect it to happen in the space of a few days, though. Also, you'll learn a lot faster if you have fun while playing.
