What is up with the pronounciation of え? So it's supposed to be the e of the English word 'set' or 'pet' right? I noticed I have a habit of sometimes pronouncing it more like the 'ay' in say so I listened intently and it really seems like it drifts towards that to my ears. (Not full on, but definite variation). It seems to depend on where it's being used.

For example the word sensei here: http://www.forvo.com/word/sensei_%28%E5%85%88%E7%94%9F%29/#ja seems to be pronounced with a different え in each version (male/female).

Is there any validity to this or is just my brain playing tricks on me?

You are doing yourself a major disservice by not immersing with anime. I've been doing immersion for 6+ months now. I have been picking up words and adding to my passive vocabulary. I hear them perfectly and right now I'm content not to make any anki cards. For example, fuzakenna. I have heard this more times than I can count now in different anime and know exactly what it is.
With anime, I'll watch it even if it does not interest me. Why? Because they'll use words that I know but in different context or they'll same them again and they'll go deeper into my subconscious. There's also the extra motivation when I hear a sentence clearly and understand all the words and the context. Sure for simple sentences for now, but I'm slowly building.

Finally, I probably have 100+ words in my passive vocabulary. That is to say. I wouldn't know what they are, but if I heard them then I would know. All without having any cards in my deck for them. This is why I immerse, because it organically builds. You don't have to do any studying for it. Just let your brain do the work.

they do but I actually meant a supercomputer and not a quantum one, i always mistake the two because they are both so much more powerful than a normal computer that it becomes very hard to imagine what they can do
