All she knows how to do with any confidence is talk about esoteric magical things and fuck people's shit up. When she's forced to do something mundane with actual people, she doesn't know how to do it properly.

The only other person to defeat her was Altrouge, who was a woman. And Shiki didn't just defeat Arcueid, he completely humiliated her by cutting her up without Arcueid being able to so much as raise a finger to stop it.

She felt curiosity about the kind of guy who could do something like that without batting an eye, then fell in love with the guy that did that and apologized for doing it, even though Arcueid should rightly be called a "monster" in his eyes.

Love is a many-headed hydra of suffering and confusion.

Exactly. That's why I liked her. She wasn't stupid or incompetent, not in the least, but she was still adorable because she was just so *curious* about everything. She only knows about very specific things, so she wants to know about everything else. Childish, in a way.
