the economics of gensokyo must be very weird, considering they have no exports but a lot of imports, a population that probably stays stagnant as birthrates are counteracted by youkai feasting or something, and harvest season is probably ruined by the fact that the seasons have been played with multiple times already

None of the youkai are allowed to hurt people from the Human Village, so I doubt Yukari or Reimu would allow population control via youkai. I'm guessing that because Gensokyo is connected to a bunch of different supernatural realms, they engage in mild trade with those, such as food and groceries with Hakugyokurou via Youmu or trade with oni and practically everyone else in Gensokyo through the production and selling of rice wines. After all, if money weren't necessary in Gensokyo and they used bartering as a means of trade and the distribution of goods, Reimu wouldn't be a jew and grub for it constantly. There's gotta be at least one dude who's whole job is producing currency, and the Human Village doesn't own any mines, so who knows how the hell they managed to keep producing coin currency and shit like that prior to that hole leading to Old Hell popping up.
