Caster is a horrible servent -- possibly the weakest servant. She's a support-class clothie, period. I hate support-classes like her because they have some neat support skills, but these are, in the end, only for support.

Caster goes through mana like no tomorrow, but doesn't get a direct combat power anywhere near to comenserate to the expenditures. So you're stuck in this catch-22 -- if you want to keep a low profile by minimizing her mana use, you are gimping her completely. If you go all-out and let her go nuts, she'll eventually attract more powerful combat servants who will come and slap her down like she's nothing.

Caster with Shirou, assuming she actually follows the (extremely flimsy) rules and doesn't try to kill him, would be incredibly gimped because she would be starved for mana all the time, and not have heavy armor, legendary swords and amazing combat power to back her up.

You could object that being the superior magus she is, she could teach him better than Rin could, and once the sword start coming it's all a matter of strenghtening.
Also, you're supposing Shirou starts struttering around like with Saber. Caster has a totally different approach to the holy grail. Shirou is not a recognized magus, she's adept at concealing herself, the other masters would take ages to find them.
Also, why should her residence be of any relevance? She could set up her temple at Ryuudouji while Shirou is at home all the same, with the added effect that no one could suspect someone who even doesn't live there.

Saber was constantly low on mana, and had to drag Shirou to bed for a small re-fill. Caster can blow way more mana then Saber. With Saber, though, she doesn't want to suck mana out from bystanders, no matter how the lack of power screws her chances at the Grail. Caster will want to suck mana out of people, but Shirou would never let her. He'd definately use the command seal to stop her if she pushed it. And without mana, what the f is she supposed to do? Maybe she would mellow out, figuring she was just screwed this time around and so therefore she should just relax and enjoy her time in the world before she's brutally and effortlessly killed and sent back to the spirit realm.

Actually I know a few games where the magus turns out to be able to hold their own against 6+ melee.

it's all about who is behind the weapon, what weapon, and how good the magus is at evading, of course if they do happen to get hit by a strong foe then they will take quite a bit of damage.

Wasn't the whole thing with UBW that you automatically gained the skills needed to wield the weapons, which was why Shirou managed to beat Gil in the first place? (of course, he'd need to survive long enough without skills to use it)

They're called servants, but in fact they can and will ignore orders when it suites them. It's kind of like God told them: "Look, you're servants and servants should do what their masters tell them to do, it's only proper," and so they generally try and fit the role, but if listening to their magus gets too tiring they'll just go do what they want because they have nothing holding them in place except for role-playing in the Grail War. Saber disobeyed a direct order and snuck out on Shirou just becuase she felt he wasn't being agressive enough. Some servants will have more or less tolerance for subserviance than Saber -- Archer had more, and Caster had less. Indeed, these "servants" are incredibly shitty ones.

I'd do everything possible to hide the fact that I'm a master and that Caster is my servant. I'd not let her do anything large-scale, sticking to survailence spells, making exotic poisons, and setting up barriers. I'd let her harvest mana in a low-key fashion. No one but me can ever see her. I'd have her summon a fake servant who will act as a bodyguard and pose as my real servant in case I'm exposed.

Caster isn't taking anyone in direct combat, so I need subtrefuge, information warfare and making full use of her support perks.
