Do you think Remilia would be willing to keep Humans around as cattle? Considering how vampire bites don't kill people in the Touhou universe, I think it could make for a pretty symbiotic relationship. The Humans would give up their freedom and have to regularly donate some of their blood, and in return Remilia would make sure that all of their needs are taken care of.

I personally wouldn't mind living like that if I still had enough entertainment to amuse myself. Especially considering you would also almost certainly be given a cute girl to breed with.

A cage isn't going to protect you from Flandre nor would her sister's auspices considering their cantankerous relationship. Any 'cattle' in the Koumakan are more likely hanging from meat hooks in a hidden freezer screaming in the dark than being treated as premium assets. The Scarlets are certainly getting their sustenance somehow but none of the humans who do frequent the grounds quite freely and would likely make an issue of any fellow humans, even outsiders, kept in cages yet never have had cause.

And yes, the Scarlet Sisters are already getting their sustenance from somewhere. But keeping a few humans around as cattle would be far more effective and humane than relying on Yukari to bring them people to slaughter. The few humans that do frequent the grounds of the SDM freely, which is basically just Marisa and Sakuya, would have much of a problem with it accordingly.

I doubt that. She respects her sister, she doesn't blindly obey her. She did try to leave without permission and she was sealed in the basement for a reason. Their relationship is based on familial love and sisters love to break each other's shit. If your just cattle, Remilia also more than likely wouldn't care enough to forbid her from playing with you, just admonish not to play with their food because that's inelegant. Flandre would anyway and you'd end up a puddle.
