Depending on how much text has been added/changed, it may not take long at all. For all we know there's just gonna be a couple new choices on the first day or two that put you on Sacchin's route, which is probably 90% of what's new. Actually, there are several day 1 choices that involve Satsuki but give Akiha points. A little point shuffle could simplify things a bit further still.

There are programs that will compare two separate text files and list the differences.

Of course, you'd have to standardize both script dumps otherwise non-script text will render that method useless.

A little more backstory pertaining to a few things perhaps. Maybe a little more development into Makihisa. Ironing out Ciel's personality a bit so its more consistent between routes (though I thought her personality WAS consistent, and other people just don't get her, but still...). I'm sure there are other things that could use some minor improvements too.

Yea, nothing really major.
Revealing a bit more backstory/history or something is always a welcome treat.

One thing I'd love to see in the remake is a % complete for dialogue.
Besides from being a completionistfag, it'd help people catch all the bits of information hidden in dialogue options that you never need to see for either good or bad/dead ends.
A tiger stamp type thing would be great too to track all endings instead of just proper endings.
