Sometimes all a plot needs for me to like it, is for me NOT to be able to predict what going to happen from the start of the series/game.

Oh, and for the plot to make sense. The first half of 00 Gundam was like that, a lot of stuff happened that I didn't see coming, like Sergei not getting pineapple saladed, or Louise and Saji actually having ANYTHING to do with the plot AT ALL.
I didn't like that subplot at all.

But what does constitute a 'deep plot' anyway? Is having a 'deep plot' even a good thing? Aren't things like production values, characterisation and getting the length right more important in the end for a thing like a VN, which is more character driven anyway?

Deep plot means that apart from the events or the character interactions themselves being the point, to carry a message or hint at actions of something that cannot be seen at face value(layers upon layers).
Eva had this much later, on the last episodes, pretty much (Shinji's choice is what everything boils down to). But it's not prominent on the WHOLE series, just the events leading up to it.

I wish Cross Channel would've started with a bit more higher note. I put it in my backlog some time ago because of that. Time passed. I blew thru Sumaga in about two weeks. I understand it shares some aspects with Cross Channel, so I guess I have return to that some day.

I guess I have to nominate Sumaga as "AS DEEP AS EVA". If one can interpret EVA's message as "mecha anime is silly and contrived", Sumaga does the same to several eroge motifs.
