I listen to little Japanese music outside a handful of soundtracks, I'm picky in general, but:

Asian Kung-Fu Generation are enjoyable alt rock.
Quruli's earlier stuff's good, they're a little more all over the place.
Mono are a good post-rock band (little more orchestral and reserved than Mogwai but not up to Godspeed levels of sampled ambient weirdness), their more recent stuff especially and one collaboration they did with World's End Girlfriend that's fucking fantastic.
DJ Krush is just plain good. Weird, dark, faintly Amon Tobin-esque triphop.
Susumu Hirasawa's good if you like (occasionally EPIC) synth heavy electropop.
Zazen Boys are math rock and decent but just make me want to listen to older Rapture stuff.
Everybody already likes the pillows.

Anime OPs are good for awhile, but my interest in them usually tapers off after awhile (happens with all pop music). Only Japanese band whose music I consistently like is UVERworld. I've listened to a good 10-15 of their songs, but Colors of the Heart (Blood+ OP3) is still the best. Best OP ever btw, not just the song but the animation as well.
