The setting makes it clear that monsters were already fed up with the Chief God's cycle. Some humanization would have happened down the line. Likely under some Inari Mamono Lord. However, monsters would be quite different. Without being Succubus, they would not be built for pleasure, so probably some monsters would still be way less aesthetic. Also monsterboys would likely exist. Also without the extreme love for men the current mamono lord has, which is very extreme. Seriously, even among Succubuses I doubt anyone loved men even close to the current mamono lord. Without such an extreme love, monsters would likely be far deathlier, more willing to kill. Also forget about monsters girls being all accepting of men, they would have standards on par with human women (some races at least) if not worse, so they would not be waifus. Divorce and cheating would likely be possible too.

In short, MGE would be like any other fantasy setting, like Re Zero or Konosuba.

What makes you think this? Keep in mind the following points:

1. Yes, through history there had been a fair number of cases of monsters who became able to resist their urge to kill humans, and even fall in love with them. However, even if such a monster were to become Mamono Lord they would not have had the power needed to remove the human-killing instinct as Lilith did (she could do so due to several reasons, including being a succubus), and change Monster Mana in such a way that monsters could feed on humans without risking their death (even Sabbath doesn't know how she accomplished the latter).
2. Most monsters were not sapient, and were essentially very powerful and bloodthirsty animals. They didn't have the mental capacity to be "fed up" with their role in the world.
3. Even in Zipangu, where monsters managed to develop differently due possibly to the influence of other gods, their overall relationship with humans was far from positive (it often amounted to people being willing to sacrifice the lives of a few to soothe the wrath of the monsters for the whole). Its questionable if a mamono lord inari would have been able to do what Lilith did.

But the MGE versions were created by the gods as a subset of monsters. Very powerful monsters yes, but still kin to the rest of the monsters. And the abyssal races we so far have seen don't even seem to be on the same tier as the ones who once divided the rule of the seas with Poseidon. Instead they are monsters created by the abyssals (shoggoth), monsters that worship the abyssals (mindflayer) or monsters that seem to be closely related to them (wendigo, night gaunt, atlach nacha).

If this were other settings then the whole "reality shattering" thing would probably apply. But as of yet it doesn't seem to in the MGE. The chaos monsters in the MGE are more extremely bizarre rather than reality shattering powerful.

The thing with chaos species' profiles is that they're purposefully written in an unclear and cryptic manner that leaves a lot to imagination.

What are you basing this on? They don't serve the Mamono Lord directly, yes, but they are also stated to be kin to "all monsters." Right now I'm on more of a horror and supernatural kick but I've written plenty of sappy romances and dramas too.
