He's a rider so he gets multiple: North Pole/Santa's Workshop as a reality marble; an incredibly fast sleigh pulled by 9 named phantasmal beasts; perhaps also his bag could work as a low rank NP, with function comparable to Gate of Babylon.
As for skills, there are plenty you could pick from: Shapeshifting C or D (getting down the chimney), Presence Concealment B or C (hidden but sometimes caught), Item Construction EX tied to his Reality Marble, Miracle ? (his origin as St Nicholas), Riding ? (necessary for mounting a sleigh/chariot pulled by phantasmal beasts). Also a skill similar to Clairvoyance (knowledge of what everyone's doing and whether they've been good or bad).
He could also get Independent Manifestation and have the potential to become a Beast like Merlin, one representing greed or something.

So let me get this straight. Ainsworth's grand scheme uses Pandora's Box as his Grail because there are no Einzberns with 3rd Magic bullshit in this timeline. The Box's power is what generates the class cards. His original plan was to gather all 7 cards and use their power to open the box, with Erika as the catalyst/lesser grail/interface terminal. However, Erika was incapable of opening the box, and her attempt just blew up the city. However, they know that Miyu exists now. Their new plan is:

I don't remember it being that specific. Angelica also pointed out they can't make a wisht o restore the planet's mana in that condition. It may be that they need two grails for the wish of one, or that with just one it wouldn't be enough for a decent change, or maybe they'd really need two wishes. Regardless of their intent, it's pretty clear that what the box unleashes is Angra Mainyu. Furthermore, the box won't work as a wish granting device until it's empty of evil, since only at that point will "hope" be exposed. They're already blowing one cup (Miyu) on opening the box, which I feel is obvious from how Erika and Julian were begging Miyu to do it, despite Erika wallowing in the mud fountain. Given that the whole conflict has been about how much collateral damage is acceptable in the pursuit of justice, I feel that Illya's role as the 2nd cup will be to make sure that humanity doesn't get BTFO by the unleashed mud of the Box. After all, wishing for humanity to evolve so they can live on a planet without mana isn't very productive if all the humans in the world are already dead.

Anyone else feel like shaft was a terrible pick for adapting a fate series?
The mooncell stuff is the most esoteric of the fate bunch and Shaft cant make an anime without making it as obtuse as possible in narrative and dialogue. It works when it's something like monogatari or madoka where the premise is simple and the complexity rests in the characters but extra is the opposite, a very complex setting with very simple characters.
Even as a fate fan who's read/watched everything outside of the mooncell stuff I find myself not following along or caring at all about the characters, and the visuals are pretty uninteresting as well.

I've actually already read the manga, but I still wanted to read the original. I liked the manga, even if it didn't blow my mind. And I know the Far side is the highlight, it's the reason I convinced myself to read Tsukihime in the end, but I don't want to force me to do it when I'm not enjoying it, or I'll end up hating it. I think I'll put it on hold for a while (I've finished Arc route and 3/4s of Ciel's) and finish it when I find the interest again.

On your first point, I think having no experience would actually make it easier. My favorite part in most VNs is the OST, and even most moege have more variety than Tsukihime. I've been spoiled by R07's works having ginormous OSTs too, so no experience would maybe make it easier.
