I'm interested in reading the Fate series in the visual novel form, but i don't know the order of the series. I know the most important one is fate/zero and fate/stay night, but the other sequels/spinoffs/??? is sorta confusing.

Yes it's part of the series, and it is also the prequel, but it's recommended that you read fate/stay night before watching fate/zero. Either way works though.

Everything besides Zero and Stay/Night is basically just extra imo. I mean if any of the other stuff piques your interest, go for it, but it's not considered necessary reading/viewing.

There is no possible way you haven't heard "production order" as advice, so the fact that you're asking means you are just looking for an excuse to do something different.
