Actually, his critical mistake is getting that close in the first place. Regardless of how powerful Ea is, Gil just isn't as good a swordsman as Saber, hell, even UBW-powered Shirou.

Gil, unlike Sakura, doesn't have unlimited mana. He's got a lot, but not enough to just spam Noble Phantasms at everyone all the time. Especially considering that Ea is probably rather expensive to use, given that its the strongest.

What Gil should have done is simple. Take out is Ea on the moment he's summoned and keep charging it up until enough power is stored to completely wipe out Fuyuki.

Gil now =/= Gil from the 4th war, He is a lot weaker now due to being exposed to the grail and not being a proper servant with a master to get mana from.

Though still if he had just shot Sakura from a rooftop or something .. he wouldn't of died.
