I think the biggest difference between Tsukihime and Fate/Stay Night is the importance of main character.

When it comes to fights, Shiki is always the one who decides the scores. He is the active solution to all conflicts in the game, while in Fate/Stay this spotlight is distributed widely to different characters. Shirou himself has only few crowing moments of victory, which I think led to people thinking he is not as good character as Shiki.

In short, people like fights and like to see main character kill shit. Not just be thrown around by berserker or something.

In the main route there was only one scene where Shiki awesomely defeated someone. Other fights were quite desperate.
