I'm waiting for my mahjong set and mat, probably going to be here in January.

I can't wait to play with people and actually learn how to play mahjong for real.
Online mahjong is on fucking speed, you have no time to actually form thoughts past really vague assumptions, and even by playing a thousand games you will learn nothing, because you can't read discards and make conclusions in the split second that passes between your discard and the other three.

The only thing I'm getting better at is tile efficiency, but my level of defensive reading is probably the same as when I started playing. All the strategies I've read about are not something I can apply with a scarce 3 seconds at my disposal.

I partly agree. I DID get better by playing more games on tenhou, but that is to a large degree thanks to me getting faster, rather than learning new strategies. The situation can change very quickly though, by a player declaring riichi or an open meld for example. It certainly gets better, but I'd still prefer it if you had more time so the game would actually be more about who has the best strategy. Look at online poker sites for example. Poker is far simpler than mahjong in terms of the information you have to consider, yet most poker sites will give you around 20s for your turn.

It's the safest tile to discard for later, when other player hands start to become more dangerous to deal with.

Though, Ton and Chun were also relatively safe too. Sure, a little bit of efficiency is sacrificed; but all the other tiles discarded beforehand were worthless too.
