What do Japanese people do with their leftover rice?

Do they refrigerate it and microwave the hardened rice? Or do they leave it out all night and risk getting sick?

Freezing and rapid reheating is best though. Best to put them in bags if you want to portion them.

Steam may also moisten it, get a rice steamer in that case.

This whole 'never reheat rice' maymay is based on half-truths and fear of lawsuits.
It comes from keeping rice at 37C for days and days, like in chinese restaurants.
It's okay to reheat rice once. But in restaurants they used to reheat it again, and again, and again, and again, and again.
Keep rice hot or keep it cold or keep it dry. Warm or room temperature is what you want to avoid, weeks on end.

I want a rice cooker but I just don't eat rice enough to justify one. Well actually I would get one but there's no space for it either.

I stick it in the fridge and microwave it when I want to eat it. I prefer making only just enough rice for the day though, microwaved rice tends to be a bit dry.

I've been trying to cut back on eating rice, though. I eat it nearly every day.

I usually make fried rice with my leftovers, and use sake for seasoning. I'd like to know some more recipes for rice in general though, all I really do with it is season half the pot with furikake and have that for lunch.

I use medium grain rice.

Typical westerners. You've no appreciation in the immortality of rice.

Here's a start for you:

Grab all of your leftover rice and a frying pan (or a large wok, if you were so keen into producing so much wastage when you cooked your rice)

Cooking oil in the pan. I use canola, because that's all we have in my house. Wait for it to smoke.

Crushed garlic. Small-to-medium portion, I estimate about a tablespoon for every cup of rice you're cooking, but what the hell. Smells fucking great and adds great flavor. Definitely the more the merrier. Cook till fucking golden. You can smell the difference.

If you want some other shit to go with your rice, you're gonna do it here. I like me some diced or just sliced hotdog, and/or egg with mine, but since that takes more effort, I just say 'fuck it' and I cook it later, separately and eat it with the fried rice.

Get your rice. Pop it in the wok and fucking toss that shit. Or don't, since you're probably a rubbery little shit. Just mix it around with whatever you got. A spoon or some shit.

Sprinkle some salt on that bitch. How much also depends on your taste < my taste and how large a potion your cooking. I do like 2-3 pinches on a plateful of rice. Fuck if I know how many cups those were.

Dash of oil to finish it off and toss that bitch. Again, don't do it if you can't handle it, sissy. Just get a ladle or some wussy shit. I don't know.

It's gonna take some time to fry so just leave it on for a few minutes. Watch Miritari or some other 3-5 minute anime feature that's airing this season. Actually, don't, you'll burn your house down, you shit. Between your anxiety and your indecision, it should be shiny and lightly golden now. It's fucking done.

Finished with chicken broth on the stove.
Added salt and thyme (in hindsight, should have tossed the time with some garlic until it got aromatic)

Its in the oven under some chicken thighs right now, collecting some delicous drippings

If you plan on having rice left over, take it off of the heat fucking immediately. Dump it on a sheet of ceramic wrap and put it in the fridge. If you're lazy like me, a ziplock bag will also do the job and is exceedingly convenient if you want to make an onigiri with it later on. I usually make it a yaki-onigiri.

I have a sweet ass $600 platinum rice cooker and it keeps rice good for days with the keep warm feature. It regulates rice temperature, humidity and pressure.

I would assume most modern intelligent rice cookers will do the same.
